Cephalopods are a staple family of ingredients in Mediterranean, Asian and Iberian cooking. Martigane carries a full range covering every presentation and origin, from economical industrial squid to premium North Sea calamari and Portuguese octopus.
The U grading on squid and octopus stands for "under": U5 means fewer than 5 pieces per kilo, so very large pieces; U10 means fewer than 10 per kilo. The lower the number, the larger and more valuable the piece. A U3 octopus therefore weighs over 330g per piece, ideal for grilling and serving whole, while a U10 squid is smaller and better suited to rings and frying.
Dutch Loligo vulgaris and Sepia officinalis, caught by flyshoot and beam trawl and frozen rapidly on board, are a different product from the industrial references above: finer texture, more delicate flavour, and a presentation that stands up to being the centrepiece of a plate. They price accordingly and belong on menus where the squid itself is what the customer is paying for.
Octopus and large squid need either long slow cooking or prior tenderising. Freezing itself helps: the ice crystals break down muscle fibres, which is why frozen octopus is often easier to cook tender than fresh. It is worth telling your food service customers — it turns a perceived compromise into a genuine technical advantage.
