Rice is the most consumed cereal in West Africa. Sub-Saharan Africa imports between 12 and 15 million tonnes of rice per year, most of it long grain white rice with 5% or 25% brokens. Demand is growing 4 to 5% per year.
5% vs 25% brokens: the brokens percentage indicates the proportion of broken grains. 5% brokens is premium quality (whole grains, better visual appearance, higher price). 25% brokens is more economical, widely consumed in institutional catering and low-income households in West Africa.
Parboiled rice undergoes hydrothermal treatment before milling, transferring nutrients from the bran into the grain. Result: better nutritional value, superior cooking integrity, longer shelf life. Highly valued in East Africa (Kenya, Tanzania) and the Middle East.
